Fiber One Challenges - Success!

I feel as though I've been away for ages! Oh wait - I guess I have. And still the elusive Sweet Potato Cheesecake eludes me. Hurumph.

I'm here with another project however. As you know, I am an Allrecipes Allstar Ambassador and what that means is that I get to do fun food related projects every month and also get to participate in surveys, trials, and the like. Anyway, this month's challenge involved Fiber One cereal. We were to make a recipe from them, Fiber One Peanut Butter Haystacks, and then create our own using the cereal. I'm not lying when I tell you that every single time I thought of something to do with this blasted cereal, someone else thought of it and posted their recipe. I was beginning to think it was a conspiracy (yes, I am just joking), but I pushed through it and it must have been fate because I chose something that turned out rather tasty if I do say so myself.

The recipe I came up with is Fiber One Salad Crunchies. It turned out to be really good and I'll be making it again and again because its a great way to work some healthy fiber into your every-day diet without feeling like you have to "force" yourself into it. And the real bonus? This recipe literally takes 15 minutes from start to finish, and uses stuff you most likely have on hand already.

Here is the cast of characters: Thyme, Oregano, Garlic Powder, Onion Powder, Slivered Almonds, Fiber One cereal, and non-stick cooking spray. 


First off, I chose to break up the cereal a little bit because, well, look at it. It can be a bit visually undesirable shall we say? So, in a plastic bag it went and I proceeded to crush it just a bit to make it look better.


After crushing it a bit, place the cereal on an aluminum foil baking sheet and spread it out. Spray lightly but evenly with the non-stick spray and proceed to sprinkle on the seasonings: 1/2 t. crushed thyme, 1/2 t. oregano, 1/4 t. garlic powder, 1/4 t. onion powder. Once you have sprinkled the seasonings on, spray once more with the non-stick spray, mix up a bit to incorporate everything, and then sprinkle the almonds over the mixture, spreading it out evenly.


Pop into a preheated 350 degree oven for about 5 minutes or until you smell that nice, nutty smell coming from the oven. Remove from the oven and set aside to cool completely.



And there you have it - Fiber One Salad Crunchies, all ready to top your favorite salad.
